Chuck Rolles opened his first steak house in Honolulu, Hawaii in 1959. Chuck's Steak House soon expanded and became the first restaurant to introduce the concept of having a grill and salad bar in the dining room on the mainland United States. Chuck's Steak House in Danbury was opened by Hank Zaccara, co-owner and General Manager, in May of 1973. His formula for success was simple: serve quality steaks at a reasonable price, make an honest drink, and treat your customers well. Nearly 50 years later we remain committed to these unpretentious ideas, and we're proud to continue to serve our community in the tradition of a classic American steak house.


Our steaks and meats are selected for exceptional quality and taste. We offer the highest grades of meat available - USDA Prime and USDA Choice - sourced from the corn belt region of the Midwest and aged up to 28 days before being hand-cut by our butcher. This aging process develops the richness and tenderness Chuck's customers have come to expect and keeps them coming back year after year.

A customer favorite for decades, our salad bar features a wide variety of crisp vegetables, house-made salads and dressings, along with our assortment of fresh breads.


Starting with lobster tails as the only seafood choice on the menu, Chuck's has added many delicious fresh fish and shellfish items over the years. Customers can expect to find grilled farm-raised Atlantic Salmon, baked scrod, lobster tails and shrimp as regular menu items, along with seasonal choices like Blue Point oysters, Maine lobsters, and house-made crab cakes.
